Paella Valenciana. April 2, 1:30 pm. The traditional version of paella from Valencia doesn’t have seafood! While the most well-known versions of the dish are covered in shrimp and mussels, traditional paella is altogether meatier. A real paella Valenciana is made with pork, chicken, rabbit (and often snails), spiced with sweet paprika, and a few strands of golden saffron. Everything cooks together in one pan and absorbs the smoky flavor from the paprika and saffron used in the dish. Paella has held a place of honor and practicality in Spanish homes for centuries, nourishing, vibrant, and without pretension. It is one of our specialties, and we will cook it perfectly. Price: Club members: $28/pp, Non-Club: $35/pp.

A beautiful flavorful, complex and dry, making it both versatile with food and delicious by itself as an apéritif. Ripe raspberry and strawberry aromas meet honey, jasmine, and floral notes on the palate, making this a very smooth, multifaceted and elegant wine. Made in the traditional Méthod Champenoise from Chardonnay and Pinot Noir grapes, the small and beautiful bubbles dance on the palate with a long and refreshing fruitful finish.

This is a classic Syrah. Flashy, oaky, rich, and built for the long haul, it leads with prominent cola-like barrel influence, followed closely by blackberries, violets, dried savory herbs, and a baseline of fire-roasted vegetables. The palate is ripe and powerful but balanced. The oak is well integrated with the plush fruit and structured, herb-flecked tannins. Drink now or age it for another year or two, your choice.
