In the old days of the wild west spices were not always available but there was always plenty of coffee. During many cattle marches, coffee was the only spice besides salt. This recipe is a slight variation of steak prepared during those lost days. Obviously, the Apollo olive oil in the ingredient section was available to cowboys but I can think some possible Spanish cowboys with some olive oil, paprika and a bottle of wine in their saddle bags.

Coat each steak (both sides) with a thin layer of Apollo olive oil. Sprinkle salt and pepper to taste. Place a generous amount of coffee beans on both sides of the steak. Cover for about one or two hours. Set grill on high and after it reaches 350 degrees, sear steaks and cook with the grill door open until desired doneness. As the steaks cook, the coffee beans will vaporize inducing a wonderful smoky aroma and taste into the meat.
